From the point of view of an aircraft modeler, this is a constant consideration. If you're texturing from existing photos or art you're tied to the photo/artwork size but if mapping for later paintwork I like to specify a mapping size in a UVW Mapping modifier. There may be as many as a dozen such modifiers before I'm ready to apply a UVW Unwrap and arrange the complete mapping on a template. Planar maps will be size x size, cylindrical will be radius x radius x size and cube maps size x size x size.
That said, I use several different resolutions in my current VC project, the background stuff being at lower resolution, the gauges and knobs at a higher one.
